 Tomates farcies simples
Les tomates farcies sont des bijoux de notre enfance qui nous rappellent le goût des bonnes choses et celui des repas en famille, au soleil, ou malgré la pluie. Très abordables à cuisiner, en voici une version de base pour les cordons bleus pressés et les tabliers débutants. À customiser avec des herbes, des épices, des fruits secs et tout ce dont on a envie.

  1. PRÉPARATION
  2. ÉTAPE 1
  3. Pendant que votre four préchauffe à 210°C (th.7), coupez le haut de chaque tomate et conservez chaque chapeau de côté. À l'aide d'une cuillère, évidez les 2/3 de sa chair afin de la transformer en une sorte de bol qui pourra contenir la farce.
  4. ÉTAPE 2
  5. Dans un saladier, commencez par fouetter ensemble (à la fourchette) la moitié du lait avec les oeufs. Ajoutez ensuite la pulpe et les pépins de tomate (n'hésitez pas à les mixer avec un peu d'huile), ainsi que le pain ou la mie de pain émiettée (ou pourquoi pas de la chapelure). Ajoutez le reste du lait pour bien imbiber le tout, et mélangez. Ajoutez pour finir votre viande hachée, en l'émiettant le mieux possible du bout des doigts. Complétez par un assaisonnement en sel et poivre, et mélangez le tout à la cuillère ou à la main.

Remplissez les tomates de farce, placez-les dans un plat (idéalement par dessus une grille intérieure qui leur permettra de dégorger), arrosez-les d'huile d'olive et enfournez-les pendant environ 45 min, en ajoutant les chapeaux en fin de cuisson. Pendant la cuisson, munissez-vous d'une casserole et faites cuire le riz, la semoule ou les céréales que vous avez prévus comme accompagnement.

ASTUCES La tomate coeur de boeuf n'étant que l'un des membres de la grande famille des légumes farcis, n'hésitez pas à décliner cette recette avec d'autres tomates, ou avec des courgettes rondes, des petites aubergines ou de jolis poivrons. Et pour parfumer davantage la farce, ajoutez du basilic ciselé, de la coriandre, du persil plat ou de la menthe.
