  2. ÉTAPE 1
  3. Nettoyez les calamars. Otez la fine pellicule brune qui les recouvre. Retournez-les, videz-les et retirez le cartilage transparent. Coupez le bec qui se trouve dans la tête.
  4. ÉTAPE 2
  5. Rincez soigneusement les calmars ou encornet et séchez-les. Pelez et hachez les gousses d'ail. Après avoir rincé et égoutté le persil, ciselé-le finement. Dans une grande poêle, vous placez les calmars, Ajoutez l'ail et le persil.
  6. ÉTAPE 3
  7. Ajoutez l'huile d'olive. Salez et poivrez. Faites les revenir à feu vif pendant 15 min environ, jusqu'à ce qu'il ne reste plus de jus dans la poêle. Ajoutez le vin blanc.
  8. ÉTAPE 4
  9. Faites les à nouveau cuire et réduire pendant 5 min. Décollez les sucs de cuisson en grattant le fond de la poêle à l'aide d'une spatule. Servez-les chaud ou froid.
