  3. Pelez les courgettes en laissant une peau sur deux avec l'économe.

  7. Ouvrez l'aubergine en deux puis avec une petite cuillére enlevez le centre de la chair où il y a les pépins puis détailler l'aubergine en cube.

  9. Emincez l'oignon et l'ail

  11. Coupez les poivrons en deux puis enlever les pépins et les parties blanches et détailler les en laniéres.

  13. Émondez les tomates (Mis dans l'eau bouillante jusqu'à ce que la peau commence à s'enlever puis les sortir et les peler.) Détaillez les en cubes.

  15. Dans une poêle arrosez d'un filet d'huile d'olive faites revenir vos légumes un par un en commençant par les courgettes puis réserver, ensuite l'aubergine que vous réserver et les poivrons.

  17. Rajoutez à chaque cuisson de l'huile d'olive.

  19. Dans un grand faitout en fonte, arroser d'huile d'olive et faite revenir vos oignons pour qu'ils soient caramélisés. Ensuite mettre l'ail avec les oignons et faire revenir encore un peu.

  21. Dans un tasse mettre une petite boite de concentré de tomate avec un peu d'eau et déverser dans le faitout avec l'ail et les oignons.

  23. Ensuite mettre les tomates fraiches puis la sauce nature.

  25. Saler et poivrer et mettre les herbes fraiches.

  27. Faire mijoter à feu doux pendant 45 minutes. Remuer de temps en temps

  29. A la fin rajouter la cuillére à soupe de miel puis remuer encore.
  30. ÉTAPE 15
  31. Rajouter ensuite tout vos légumes à la sauces et remuer en faisant mijoter pendant 45 minutes de plus.
  32. ÉTAPE 16
  33. Les légumes doivent êtres fondant.
