  2. ÉTAPE 1
  3. Portez 1,5 litre d'eau à ébullition, dans un auto-cuiseur avec l'oignon piqué de clous de girofle, le bouquet garni, les carottes épluchées, le céleri et un peu de sel.
  4. ÉTAPE 2
  5. Ajoutez la viande coupée en gros cubes, fermez, mettez sous pression et laissez cuire 20 minutes.
  6. ÉTAPE 3
  7. Épluchez oignons et pommes de terre, nettoyez les champignons, arrosez-les du jus d'1/2 citron.
  8. ÉTAPE 4
  9. Ouvrez la cocotte et prélevez 50 cl de bouillon ; ajoutez les oignons et les champignons, les pommes de terre coupées en deux. Remettez sous pression, laissez cuire 8 minutes.
  10. ÉTAPE 5
  11. Préparez la sauce : faites fondre les 50 g de beurre dans une grande casserole, ajoutez la farine, mélangez sur feu doux en laissant cuire jusqu'à ce que le mélange mousse. Ajoutez peu à peu le bouillon chaud, sans cesser de tourner jusqu'à épaississement.

  13. Délayez les jaunes d'oeufs et la crème, le jus de citron avec un peu de sauce chaude ; remettez dans la casserole, réchauffez sans bouillir, salez, poivrez.
  14. ÉTAPE 7
  15. Pour servir, présentez la viande et les légumes dans un plat chaud, nappez de sauce, saupoudrez de persil ciselé.
