Dans le bol du COMPANION muni du batteur, mettez les jaunes d’oeufs, 80 g de sucre et les graines de la gousse de vanille. Mixez à vitesse 6 pendant 1 minute. Au bout de 30 secondes ajoutez le lait. Puis ensuite lancez le programme crème dessert vitesse 4 à 85°C pour 12 minutes.

Laissez refroidir puis mettez au frigo 2 ou 3 heures. Dans le bol du Companion, mettez les blancs d’oeuf et les 80 g de sucre restant. Programmez en vitesse 7 à 70°C pour une durée de 6 minutes 30 sans le bouchon.

Dès la fin de la cuisson, formez vos îles et mettez-les à égoutter sur du papier absorbant. Nappez de caramel et servez avec la crème bien froide.
