Chips aux crevettes
Servies dans les restaurants chinois et dégustées à l'heure de l'apéritif, les chips de crevettes font le bonheur des petits et des grands gourmands. Contrairement aux chips classiques, celles-ci se cuisent sans friture, ce qui les rend particulièrement légères. Nous vous proposons une recette facile et rapide de chips de crevettes croustillantes et gourmandes. De quoi vous régaler en toute simplicité !
Épluchez la gousse d'ail. Placez-la dans un mixeur. Ajoutez le sel, le poivre, les crevettes et le sucre en poudre. Mixez jusqu'à obtention d'une pâte homogène.
ÉTAPE 2
Ajoutez la farine de tapioca. Mixez tout en ajoutant un peu d'eau. Sortez la pâte du mixeur et pétrissez-la pendant 5 min. Elle doit être compacte. Roulez la pâte en forme de boudin d'environ 6 cm de diamètre. Enveloppez le boudin dans du film alimentaire.
ÉTAPE 3
Faites cuire pendant 1 h à la vapeur, dans un cuiseur-vapeur ou dans un panier vapeur en bambou. Lorsque la cuisson est terminée, retirez le film alimentaire et laissez refroidir.
ÉTAPE 4
À l'aide d'un couteau bien aiguisé, découpez le boudin en fines lamelles. Disposez -les sur une plaque sans les superposer. Faites sécher les chips au soleil (ou dans un four à basse température) pendant 3 jours. Lorsque les chips sont bien sèches et croustillantes, elles sont prêtes. Conservez-les dans une boîte bien hermétique.

ASTUCES Ces chips de crevettes peuvent être servies avec un dip aux câpres. Pour le préparer, hachez finement 1 c. à soupe de câpres. Mélangez les câpres avec 125 g de yaourt à la grecque, 1 c. à café de jus de citron, poivrez généreusement. Servez ce dip bien frais avec les chips de crevettes croustillantes. Régal assuré !
